Cottage Cheese Cornbread
Sweet and moist cornbread with cottage cheese.
Yield: 10 inches Cast Iron Skillet
Ingredients:
1 1/2 cups All Purpose Flour
1 cup Yellow Cornmeal
1/2 cup Granulated Sugar
2 tsp Baking Powder
1/2 tsp Fine Salt
1/4 tsp Baking Soda
1 cup Yogurt
1 cup Cottage Cheese
3 Eggs
1/4 cup Oil
1 tbsp Butter
- Preheat oven at 400F°/205°C. Preheat skillet as you warm up the oven.
- Mix all the dry ingredients in a large bowl.
- Mix wet ingredients in another bowl, add to the bowl with dry ingredients. Mix well with spatula.
- Once the oven is at desired temperature, take out the skillet. Coat sides and bottom well with butter. Pour batter into the skillet.
- Bake for 25-35 minutes.
- For sweeter cornbread, coat the top with additional honey and butter as you please.
