Cottage Cheese Cornbread

Sweet and moist cornbread with cottage cheese.

Yield: 10 inches Cast Iron Skillet

Ingredients:
1 1/2 cups All Purpose Flour
1 cup Yellow Cornmeal
1/2 cup Granulated Sugar
2 tsp Baking Powder
1/2 tsp Fine Salt
1/4 tsp Baking Soda
1 cup Yogurt
1 cup Cottage Cheese
3 Eggs
1/4 cup Oil
1 tbsp Butter

  1. Preheat oven at 400F°/205°C. Preheat skillet as you warm up the oven.
  2. Mix all the dry ingredients in a large bowl.
  3. Mix wet ingredients in another bowl, add to the bowl with dry ingredients. Mix well with spatula.
  4. Once the oven is at desired temperature, take out the skillet.  Coat sides and bottom well with butter. Pour batter into the skillet.
  5. Bake for 25-35 minutes.
  6. For sweeter cornbread, coat the top with additional honey and butter as you please.
